The wheels are toasted after pressing, then aged for a few months. The texture is firm, but supple and the flavor is awesome - smoky brown butter, popcorn, caramel and a slight gaminess make for a deliciously complex cheese which is sweet savory and  delicious.

Each wheel is approx. 1.5 lbs

**NATURAL MOLD DISCLAIMER: Cheese is a natural food product and MAY have mold growth on the rind. This is perfectly normal and can occur on the rind during the aging process. Mold is not harmful and will not affect the flavor of the cheese.
