The Cravero family has been carefully choosing and aging Parmigiano for over 150 years, with Giorgio now continuing the tradition as the fifth generation family member. He sources his wheels from two skilled cheesemakers, including Massimo Libra who produces a limited quantity of high-quality Parmigiano with just seven wheels per day. As one of only thirty producers to receive the prestigious Prodotto di Montagna label, he guarantees top-notch cheese.

Giorgio is selective in choosing wheels for his aging cellar, ensuring that his Parmigiano Reggiano is not just a pasta topping, but also a versatile cheese that can be enjoyed on its own. This results in a softer, creamier texture compared to the traditional Parmigiano, boasting notes of pecans, cooked pasta, grapes, and butterscotch. As for alcohol pairing, Giorgio recommends prosecco as the perfect accompaniment.
